Ingredients for Vegetable Kebab Bowl Recipe

For Cauliflower Rice Tasting Like Bulgur:

  • 2 tablespoons of olive oil (sunflower oil as desired)
  • 1/2 capia pepper ( chopped)
  • 1/2 green pepper ( chopped)
  • 1/2 small size cauliflower (chopped)
  • 3 tablespoons grated tomato
  • 1 clove of garlic (finely chopped)
  • 1 teaspoon of salt
  • 1 teaspoon of thyme

For Vegetable Shish Meatballs:

  • 100 grams of low-fat ground beef
  • 1/2 small onion
  • 1/2 capia pepper
  • 1 green pepper ( chopped)
  • 1 tablespoon (heaping) breadcrumbs
  • 1/2 egg _
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground red pepper

For Cumin Hummus:

  • 1 cup boiled chickpeas
  • 1/4 cup boiled chickpea juice
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt

For the Olive Salad:

  • 4-5 grilled green olives ( cut in half)
  • 3 cherry tomatoes ( cut in half)
  • 1 small almond cucumber (diced)
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil

How to Make Vegetable Kebab Bowl Recipe?

  • Start heating the pan and pot over low heat. Process the cauliflower until it becomes the size of bulgur grain. Chop the capia, green pepper and garlic.
  • Sauté peppers and garlic with olive oil in a heated pot. Add the chopped cauliflower, tomato sauce and other spices except thyme, mix, cover the pot and cook until the cauliflower becomes soft.
  • To prepare the shish meatballs, grind the onions and peppers. Combine all the ingredients needed for meatballs in a bowl and knead well. Take pieces of the mortar and put them on the bottle, supporting them with your fingers. Fry in a heated pan, turning each side.
