  • 4 cloves of garlic
  • 1 large size onion
  • 350 grams of cubed veal
  • 2 kilograms of pumpkin
  • 2 cups boiled chickpeas
  • 3 cups hot water
  • 3 tablespoons of oil
  • 2 tablespoons tomato paste
  • 1/2 cup sumac syrup (or pomegranate syrup)
  • 1 pinch of salt
  • 1 pinch black pepper
  • 1 pinch of chili pepper
  • 1 pinch of thyme
  • 2 teaspoons of mint
  • 3 tablespoons of olive oil

How to Make Zucchini Recipe?

  • Boil chickpeas and meat separately and let them sit.
  • Chop the onions and cut the zucchini into cubes.
  • Start frying the onions in oil in a large pot, and when the onions lose color, add the zucchinis. Then add the tomato paste. After roasting some zucchini, add 3 glasses of hot water or beef bone broth, if you have it. Wait for the zucchinis to soften like this. However, carry out all these processes on low heat.
  • When the zucchinis soften a little, add the chickpeas and meat. Add the garlic by cutting it into small pieces.
  • Add enough water not to cover it and let it cook on low heat.
  • After the pumpkins are cooked, add the sumac juice. Then turn off the stove.
  • Heat olive oil or butter in a pan, sprinkle plenty of mint in it and pour it over the food. Enjoy your meal.
