One of the most popular and well-known hot starters of the Ottoman Palace Cuisine is "Almond Soup".
Almond, whose homeland is Central Asia, has found a place in the eating habits of Turks since Central Asia, and appears as soup in Ottoman records in the 16th century
- 500 ml. pasteurized milk
- 100 ml. Meat Water
- 50 grams of almonds
- 100 grams of powdered almonds
- 1 bitter almond
- 5 grams of salt
- 40 grams of flour
- 1/4 teaspoon grated nutmeg
For service:
- 2 tablespoons of pomegranate seeds
How to Make Almond Soup Recipe?
- Put pasteurized milk and broth in a deep pot. Boil the milk mixture over medium heat until it reaches the boiling point.
- Grind raw almonds, without shells, in the form of grains, together with one bitter almond, in a food processor until they become powdery.
- Add some of the boiling milk broth mixture and continue mixing.
- Strain the small amount of milky broth, which tastes of bitter almonds and raw almonds, using cheesecloth and transfer it to the soup pot.
- Boil the soup mixture to which you add powdered almonds over low heat.
- After adding salt to the soup mixture that you added little by little, continue cooking on low heat for about 10 minutes.
- After garnishing the almond soup in serving bowls with pomegranate seeds, serve it hot without waiting. Share with your loved ones.
