- 5 medium sized carrots
- 1 large size onion
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 2 sugar cube-sized pieces of fresh ginger
- 4 cups hot water
- 1 teaspoon of black pepper
- 1/2 teaspoon salt
How to Make Ginger Carrot Soup Recipe?
- Cut the peeled carrots and onion into pieces one cm each. Chop it into meal sized pieces.
- Heat the olive oil in a deep pot. Sauté the carrots and onions in hot oil until they turn a light colour.
- Crush the garlic and finely chopped fresh ginger in separate bowls to release their aroma.
- Add crushed garlic and fresh ginger to the roasted onions and carrots. Continue sautéing until the scent of ginger surrounds the area.
- After adding the black peppercorns, add enough hot water (approximately 4 cups) to cover all the ingredients with a thickness of about three fingers.
- After cooking the soup on low heat for 30 minutes, puree it in a hand blender and add salt.
- If desired, remove the pulp from the soup using a wire strainer and serve hot. Share with your loved ones.
