  • 1/2 kg. asparagus
  • 1 clove of garlic
  • 6-7 sprigs of spring onion
  • 1 medium sized onion
  • 2 medium sized potatoes
  • 3.5 cups chicken broth
  • 2 tablespoons parmesan cheese
  • 1/2 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon basil

How to Make Parmesan Asparagus Soup Recipe?

  • Leave the asparagus flowers to steam. After cutting off the woody part of the asparagus, chop the body and place it in a pot.
  • Add the diced onions, spring onions and garlic to the pot and sauté them together with the asparagus.
  • Chop the potatoes into cubes and add them to your sautéed vegetables. Then add chicken broth or vegetable broth and let it cook.
  • After all the vegetables are cooked, finally add the basil and turn it into soup with the help of a blender.
  • Serve by adding the steamed asparagus flowers and parmesan cheese.
