For the Soup:
- 1 glass of wheat
- 2 liters of water
For the roux:
- 1 bowl of yoghurt
- 1 egg yolk
- 2 tablespoons of flour
For the above:
- 3 tablespoons dried mint
- 2 spoonful butter
- 1 teaspoon of chili pepper
How to Make Wheat Yogurt Soup Recipe?
- After soaking the wheat in water overnight, add 1 liter of water and some salt and boil the wheat well.
- For the roux; Mix yoghurt, flour and egg yolk thoroughly in a bowl.
- Add the water in which you boiled the wheat, little by little, and add this warmed mixture to the soup pot, stirring slowly. This is the trick you need to pay attention to so that the yoghurt does not curdle.
- Meanwhile, if the soup seems thick to your eyes, you can add some more hot water. Boil the soup like this for another 10 minutes, then add salt and turn off the stove.
- For the above; Melt the butter in a pan, being careful not to burn it, and add red pepper and dried mint to it. Pour your sauce over your soup.
