Ingredients for Caponata Recipe
  • 2 eggplants (diced, fried )
  • 3 tablespoons of olive oil
  • 1 red onion ( chopped into small cubes)
  • 1 celery stalk ( chopped small)
  • 10 green olives ( pitted, cut in half)
  • 1.5 tablespoons of tomato paste
  • 1/2 tea glass of water
  • 1 tablespoon brown sugar
  • 2 tablespoons grape vinegar
  • 3 tablespoons of pine nuts
  • 2 tablespoons raisins (soaked in water)
  • 1 tablespoon capers

For the above:

  • 1 handful of parsley (chopped)

How to Make Caponata Recipe?

  • Fry the diced eggplants in hot oil and place them on a plate lined with paper towels.
  • First, fry the onion and celery stalk with olive oil in a pan for 3-4 minutes.
  • Then add green olives and tomato paste and fry for another 1-2 minutes.
  • Add water, brown sugar, vinegar and toasted pine nuts to the pan and stir.
  • Mix it one last time with the raisins, capers and fried eggplants and transfer it to the bowl to shape.
  • Invert the bowl onto the plate, sprinkle parsley on top and serve with toasted bread. Enjoy your meal!
