How to Make Cherry Cyprus Dessert Recipe?

  • For the cake, foam the eggs and sugar in a large bowl with a mixer. Add oil to the mixture and beat until it reaches a soft consistency.
  • Add all the dry ingredients to the liquid cake mixture and mix with a spatula. Place the cake mixture on a pre-oiled 30x20 rectangular tray and bake in a 160 degree fan oven for 30-35 minutes.
  • For the syrup of the cake, mix cold water and sugar until there are no sugar grains left and keep it in the refrigerator.
  • For the cherry cream, remove the pits of the cherries, place them in a medium-sized pot, add sugar and half a glass of water and cook over medium heat until the cherries soften. Mix the remaining water and starch in a separate bowl. Add the starch mixture to the softened cherries and cook over low heat for 10 minutes, stirring constantly.
  • Remove the cake from the oven, let it rest for 5 minutes and pour the cold syrup over it.
  • After the cake absorbs the syrup at room temperature, put the cherry cream on the cake, spread it gently with a spatula and let it rest at room temperature.
  • Foam the cold cream and powdered sugar with a mixer.
  • Spread the cream in a thin layer over the cherry layer and let the dessert rest in the refrigerator for 2 hours.
  • Sprinkle coconut over your rested dessert, decorate with cherries and serve by slicing. Enjoy your meal.
