Cucumber Kimchi is a recipe made by fermenting fresh and crisp cucumbers. We can also call it Korean pickle. Cucumbers are chopped, then fermented with kimchi sauce, a spicy mixture.

This sauce is a perfect combination of chili pepper, garlic, ginger, soy sauce and other spices. During the fermentation process, cucumbers gain flavor under the influence of this spicy mixture and have a sour, spicy and slightly bitter taste. Ingredients for Cucumber Kimchi (Ol Kimchi) Recipe
  • 5 cucumbers _
  • 1 teaspoon salt
  • 1/2 carrot _
  • Stems of 5 spring onions

For the Sauce:

  • 1 clove of garlic
  • 1 teaspoon of fresh ginger
  • 1 tablespoon apple (grated)
  • 2 teaspoons of silk pepper flakes
  • 2 teaspoons fish sauce

How to Make Cucumber Kimchi (Ol Kimchi) Recipe?

  • After washing the cucumbers, cut them in half lengthwise, then cut them in half again lengthwise, and finally cut each piece into two pieces crosswise. Place the cut cucumbers in a bowl, mix them with salt and let them sit for 15 minutes.
  • While the cucumbers are waiting, grate the garlic, fresh ginger and apple with a very fine grater in a separate bowl for the sauce. Add fish sauce along with chili peppers.
  • Cut the carrot into very thin strips. It will be enough to cut the spring onions into similar sizes as the cucumbers.
  • After the cucumbers are drained, wash them with plenty of cold water and drain thoroughly. Mix the drained cucumbers with the sauce, carrots and spring onions.
  • You can put the cucumber kimchi you have prepared in a jar and consume it with meals for a week. Enjoy your meal.
