Ingredients for Enchiladas De Pollo Recipe
  • 4 tortilla bread ( small)
  • 2 cups cheddar cheese (grated)
  • 1 boiled chicken breast ( shredded)

For the Sauce:

  • 4 tablespoons of oil
  • 1.5 tablespoons of flour
  • 1/2 onion _
  • 2 cloves of garlic
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 pinch of thyme
  • 1/4 teaspoon cumin
  • 1 heaping tablespoon of hot pepper paste
  • 1/2 liter chicken broth
  • 1 tablespoon dark chocolate

For Service:

  • 4 tablespoons strained yoghurt
  • 1 pinch coriander leaves
  • 2 lime slices

How to Make Enchiladas De Pollo Recipe?

  • For the sauce, fry the oil and flour in a medium-sized pot until fragrant. Add the onion and garlic chopped into very small cubes to the mixture and continue roasting until the onions become transparent.
  • After adding salt, spices and pepper paste to the pot, fry for another 2-3 minutes and add the chicken broth to the mixture, mixing little by little. Then add the chocolate. Cook the smooth sauce over low heat for another 3-4 minutes until it reaches a thick, fluid consistency.
  • Put the amount of cheese and chicken you want in the middle of the tortilla bread and wrap it like a roll without closing the edges.
  • Pour half of the sauce on the bottom of a medium-sized baking tray and place the wrapped tortillas on top, leaving no space between them. Pour the remaining sauce over the tortillas to cover them completely, add some more cheese on top, and bake them in a hot oven at 200 degrees for 10-15 minutes.
  • Serve the enchilada hot from the oven with a small amount of strained yoghurt, lime slices and coriander leaves on top or on the side. Enjoy your meal.
