This time we came up with the recipe for Medovik Cake, also known as "Russian cake" and "honey cake", which is very famous in Russia and Eastern Europe. Medovik is a delicious cake filled with cream, prepared with honey dough and baked by rolling out each layer one by one. Although it may seem laborious to make, the result is definitely worth a try.

First, we prepare thin honey biscuits. We cook each one for five minutes and let it cool. While we wait for the biscuits to cool, we prepare our cream, which has a slightly fluid consistency and is equally delicious. We make eight layers of biscuits and cream, decorate it with biscuit crumbs, let it rest in the refrigerator and enjoy it.

 
Ingredients for Medovik Cake Recipe
  • 70 grams of butter
  • 3 eggs _
  • 1/2 tea glass of sugar
  • 4 tablespoons of honey
  • 3.5 - 4 cups of flour
  • 1 teaspoon baking soda

For the cream:

  • 1 cup powdered sugar
  • 2 packs of cream
  • 300 grams of labneh cheese

How to Make Medovik Cake Recipe?

  • Whisk the cream until it becomes foamy. Mix labneh at room temperature with powdered sugar. Add it to the cream and let it rest in the fridge.
  • Take honey, sugar and butter in a bowl and melt in a bain-marie.
  • In a separate bowl, whisk the egg and baking soda.
  • Slowly add the melted honey mixture to the egg. Continue mixing during this time.
  • Finally add the flour and vanilla and knead. It will be a sticky dough. Flour the dough while rolling it out. Divide the dough into 8 equal parts.
  • Roll out each meringue slightly larger than the size of the cake plate.
  • Place one of the rolled out meringue on the baking tray. Bake at 180 degrees for 5-6 minutes.
  • Cook all the pieces this way.
  • Turn the cooked dough upside down on the cake plate and cut it. It is important to cut it immediately as it cuts easily when hot. Do not throw away the parts sticking out from the edges.
  • After preparing all the meringues in this way, apply the cream to each layer. Finally, cover the top.
  • Blend the pieces coming off the edges and cover them. Leave it in the refrigerator for a day. You can slice and serve. Enjoy your meal.
